Ingredients:
Amount Ingredient
2 x Carrots, sliced
2 x Onions, sliced
10 x Black peppercorns
1 whl clove
2 x Bay leaves
Fresh parsley
1/4 tsp Thyme
4 x Garlic buds
1/2 cup Wine vinegar, red or white
2 tbl Oil
2 x Shallots, chopped
2 tbl Lemon juice
2 cup Sherry
1 tbl Worcestershire sauce
1 x (3-5 pound) tenderloin of beef
Instructions:
Instructions: Combine the first 14 ingredients. Marinate meat in refrigerator for 24 hours. Drain, dot with butter and roast at 450 for 30 to 45 minutes depending on degree of doneness desired.

Yield: 6 to 10 servings.
