3 cup finely chopped, peeled and cored apples
1 tbl lemon juice
2 x eggs
1 cup coffee cream, whipping cream or evaporated milk
3/4 cup sugar
3 tbl melted butter
1/2 tsp ground cinnamon
1/2 cup California raisins
Instructions:
Instructions: Prepare apples and sprinkle with lemon juice; set aside. In small bowl, beat eggs; stir in cream, sugar, butter, cinnamon, apples and raisins. Turn into pastry-lined pie tin. Bake at 450: F 15 minutes.

Reduce heat to 325: F and bake about 30 minutes longer or until the filling is firm.

Serves 8
