Ingredients:
Amount Ingredient
FOR THE MARLIN STEAKS ----------------
1 tbl Olive oil
Salt and freshly ground black pepper
4 x Marlin steaks, approximately 175g (6oz) in weight and 2cm (1 inch) in thickness
----------------- FOR THE LEMON AND OREGANO DR ----------------
150 ml Extra virgin olive oil, ( 1/4 pint)
90 ml Hot water, (3fl oz)
2 x Limes, juice of
1 x Clove garlic, finely chopped
1 x 20 grams pac fresh flat leaf parsley, finely chopped
Instructions:
Instructions: Heat the olive oil in a large frying pan or griddle pan until very hot.

Season the marlin steaks with salt and freshly ground black pepper and cook for 3 minutes on each side, increasing the cooking time for a thicker steak.

In the meantime make the dressing; place the olive oil in a mixing bowl, then slowly whisk in the hot water and lime juice. Add the garlic, parsley and oregano and whisk until smooth and emulsified.

Serve the marlin steaks with the warm dressing drizzled over. Serve immediately.

NOTES : A quick and easily prepared dish with a warm herby dressing.Ideal served with new potatoes and salad.
