2 x Eggs, beaten
85 ml Sunflower oil, (3fl oz)
225 gm Plain flour sifted, (8oz)
150 ml Milk, (1/4 pint)
1 tbl Baking powder
1/2 tsp Salt
2 tbl Runny honey
Instructions:
Instructions: Whisk together the eggs, oil, milk and honey. Sift the flour, salt and baking powder and make a well in the centre and pour in the egg mixture.

Mix together gently but thoroughly.

Spoon half the mixture into muffin cases set in muffin tins. Spoon 1 tsp marmalade on top of each. Top with the remaining mixture ensuring the marmalade is covered.

Bake at 200 C/400 F/gas mark 6 for 20 minutes until well risen and golden brown.
