Instructions: Whisk together the eggs, oil, milk and honey. Sift the flour, salt and baking powder and make a well in the centre and pour in the egg mixture.
Mix together gently but thoroughly. Spoon half the mixture into muffin cases set in muffin tins. Spoon 1 tsp marmalade on top of each. Top with the remaining mixture ensuring the marmalade is covered. Bake at 200 C/400 F/gas mark 6 for 20 minutes until well risen and golden brown. Email this Recipe:
