Ingredients:
Amount Ingredient
2 cup Aunt Jemima. Pancake Mix
1/2 cup granulated sugar
1/2 tsp table salt
1 cup sweet milk (not low fat)
1 x egg, beaten
1 tsp Pure Vanilla Extract
Instructions:
Instructions: Preheat oven to 400 degrees F.
Line Muffin tins with paper cups or grease lightly.

Mix dry ingredients. Add milk, egg, melted butter, Vanilla Extract. Combine VERY gently, just wetting ingredients slightly. Dont over-mix or muffins will be heavy. Bake about 17 minutes or until light golden brown.

May add 1 or 1 1/2 mashed bananas, apple sauce or 3/4 cup blueberries.

Makes about 16 muffins if fruit is added.

Great eaten warm and buttered!
