1/2 cup all-purpose flour
2 cup granulated sugar
1 tsp pumpkin pie spice
1/2 tsp salt
1 tsp baking soda
2 x eggs, beaten
1 cup canned pumpkin puree
1/2 cup vegetable oil
3 oz cream cheese, softened
2 cup apples, peeled & chopped
----------------- STREUSEL TOPPING ----------------
1/2 cup all-purpose flour
1/2 cup granulated sugar
3 tbl butter, melted
Instructions:
Instructions: Preheat oven to 375 F. In a medium-sized bowl; combine the flour, sugar, pumpkin pie spice, salt, and baking soda. In a large bowl, mix together the eggs, pumpkin, and oil. Add the flour mixture to egg mixture and stir together well. Mix in the cream cheese and blend well. Fold in the apples.

Fill paper-lined muffin cups 3/4 full and sprinkle on the Streusel Topping. Bake for 20 to 25 minutes. Let cool on wire racks. Serve.

YIELD: 15 TO 18 MUFFINS

Streusel Topping:
In a small bowl, mix together all of the ingredients.

Makes 1 cup.
