2 lb Yukon Gold Potatoes Peel, Cube
1 lb Fennel Cubed
1 sm Onion Cubed
3 tbl Lowfat Margarine Note 1
Instructions:
Instructions: Note 1: Original recipe used 1/4 C butter

In a large saucepan over high heat, bring potatoes, fennel, onion and enough water to cover to a boil. Reduce heat to med; cover and simmer 15 min or until tender. Drain well and return to saucepan. Using a hand masher, mash the mixture until some lumps still remain. Meanwhile, melt margarine and chives. Stir margarine and chives into the potato mixture, and season with salt and pepper to taste.

This was an amazing recipe. Jeff and I really enjoyed it. Would not hesitate to make this for company. Definitely a keeper!!
