Instructions: Melt the butter in the top of double boiler over boiling water. Blend in the potatoes, salt, sugar, coconut and vanilla. Mix well. Spread in a buttered 9x13 pan. Chill to harden, cut in squares. Melt coating ingredients Dip squares with a toothpick in coating. set on wax paper to harden. Store in fridge or freezer.
