Amount Ingredient
8 cup cold water
1 lrg leek, chopped into 2" pieces
1 x onion, (with peel), chopped into 1/2" pieces
6 x cloves garlic, (with peels), coarsely chopped
2 x carrots, chopped into 2" pieces
2 stalk celery, chopped into 2" pieces
1/2 lb mushrooms, halved
1/2 bn fresh parsley
1 x bay leaf
1 tsp salt
1/2 tsp dried thyme
Instructions:
Instructions: Combine all ingredients in a 6-quart saucepot. Bring to a boil, skim off sediment from the top of the pot, and reduce heat to low.

Cover and simmer 40 minutes. Strain broth through a sieve or colander and discard the vegetables.
