Instructions: * I like to whiz mine in the food processor before adding because my kids dont like big huge lumps of tomato
In skillet, heat oil over medium heat and cook onion and garlic till tender, about 5 mins. Meanwhile combine meat, eggs, fresh breadcrumbs, tomato juice, parsley, mustard, Worcestershire, hot pepper sauce, salt and pepper. Mix in onion/garlic mixture from skillet. Line a 9x5" loaf pan with parchment paper or foil. Pat meat mixture into pan and cover with foil. Bake at 350 F for 1 hour. Remove foil and bake for another 30 -60 mins. or more till cooked. Remove meat from pan and let cool. SPICY SAUCE: In deep skillet, heat oil over medium and cook onion, garlic and hot pepper flakes till onion is tender, about 5 mins. Add tomatoes breaking up with fork if you dont whirl in food processor first like I do. Cook about 20 mins or till thick. Stir in hot pickled peppers and salt and pepper to taste. Arrange 1/2 inch slices of meat on bottom halves of buns and top with about 2 tbsp of the sauce and spread over the meat. Put tops of buns on top and serve. Makes 12 sandwiches. Enjoy!
