2 slc white bread
2 tbl whole milk
1 lb ground beef
1/2 cup freshly grated pecorino romano
2 tbl plain fine dry bread crumbs
2 lrg eggs
2 oz pancetta, thinly sliced
Salt
Freshly ground black pepper
Butter for the baking dish
3/4 cup drained canned whole peeled tomatoes, coarsely chopped
4 oz fresh mozzarella
2 tbl shredded fresh basil leaves
Instructions:
Instructions: Preheat oven to 425 degrees. Cut crusts from bread. Put bread and milk in a small bowl and mash bread with your hands to get a smooth paste. Transfer to a large mixing bowl and add beef, pecorino, bread crumbs and eggs. Chop pancetta and add it to bowl. Season lightly with salt and pepper. Mix everything together thoroughly with your hands.

Butter bottom and sides of a pie dish approximately 10 inches in diameter.

Put in the ground beef mixture and spread it out evenly with your hands. Cover with tomatoes. Cut mozzarella into strips and arrange them over tomatoes.

Sprinkle basil leaves on top with dried oregano.

Bake in preheated oven for 20 minutes. Let pizza settle for about 5 minutes after removing it from oven, then transfer it with 2 spatulas to a serving plate. Serve hot.
