Instructions: Heat oil in a wok or large skillet over medium high heat, until hot. Add potato, carrots & onion, then cook and stir 5 minutes. Stir in beef broth and 1/2 tsp. salt. Reduce heat to medium. Cover & cook 8 - 10 minutes or until potato is tender, stirring once or twice. Remove veggies from skillet and set aside. Wipe out skillet with a paper towel. Heat skillet over medium high heat until hot. Add beef & garlic and stir fry 3 minutes or until meat is no longer pink. Add parsley, paprika, cinnamon, cumin, remaining 1/2 tsp. salt & pepper, then cook and stir 1 minute. Add veggies to this mixture & heat through.
