Instructions: Make your favorite meat loaf recipe. Put it into a pie plate (not the usual loaf pan). Bake 350 degrees about 40 minutes. Drain. While meat loaf is baking, make mashed potatoes. After draining, smother meat loaf with mashed potatoes (should look like a meringue pie). Cover potatoes with sliced or shredded cheddar cheese. Place meatloaf in oven for 4 to 5 minutes until cheese melts. Serve in wedges as a pie. Easy and quick, serve with a vegetable and fruit salad.
