Ingredients:

16 x lamb, cutlets
salt, pepper
2 tsp butter
----------------- Herb Cream Sauce ----------------
1 x onions, medium
50 ml white wine
1 cup gravy mix
100 ml cream
50 gm butter
Instructions:
Instructions: Heat pan, add butter and pan fry the seasoned lamb medallions 3 minutes each side over high heat. Remove from pan and keep warm.

Herb creamSauce:
Lower heat, add a small amount of butter and gently cook onion 2 minutes to soften. Add wine, gravy, cream and herbs, bring to the boil.

Add cream and reduce to required consistency. Whisk in a small piece of butter and correct seasoning. Just before serving add the chopped fresh herbs.

To serve, place the lamb in a serving dish and coat with the herb sauce.
