Instructions: BREAD: 8 slices, 1/2" thick; 2 per sandwich) fat free whole grain loaf (8" whole round loaf)
Use outside grill or hot griddle coated with olive oil-flavored Pam spray. Brown both sides of eggplant, peppers, and mushrooms, about 5 minutes each. Baste with Liquid Smoke generously on each side of veggie. Spray both sides of bread with no-fat butter spray. Place on grill or griddle and toast until golden brown, then remove. Pile up the smoky flavor veggies on the toasted bread. Spread mustard, add romaine lettuce and tomato slices onto sandwich. Cut in half for serving - its more than a mouthful! Serve with lentil soup.
