Instructions: In a food processor blend the melon until it is a smooth puree add the wine buttermilk and lime juice and process again.
Pour into four bowls and garnish with ginger. For a sweeter soup perhaps for a pudding substitute crystallised ginger for raw and add 4 tbsp of melon cubes. Serves 4 Avocado and goats cheese toast 1 ripe avocado mashed 4oz soft goats cheese 2 spring onions finely sliced 1 tbsp chopped dill 1 tbsp lemon juice 1 tbsp extra virgin olive oil salt and black pepper Combine the first six ingredients to a rough paste.
