Instructions: Press raspberries and ricotta cheese through a wire mesh sieve into a small bowl. (Discard residue in sieve.) Stir in sugar and vanilla, set aside or refrigerate until ready to use.
Cut cantaloupe into quarters, scoop out seeds, and remove rind. With a small sharp knife, make several equally spaced lengthwise cuts down the fruit, leaving one end intact to serve as the "base" of the fan. Press gently to open into a fan shape. Divide raspberry sauce among 4 dessert plates. Top with cantaloupe fans and sprinkle evenly with crystallized ginger. This recipe yields 4 servings. Comments: Fan shapes are a fancy way to cut cantaloupe, but if you want to cube it, go right ahead. Instead of using ginger, you can garnish with chopped fresh or crushed dried mint.
