Amount Ingredient
1 x Ripe mango, papaya or 1/2 cantaloupe, peeled, seeded and diced (1/4-inch)
1/4 cup Sliced scallion, green tops
1/4 cup Diced red bell pepper
1/4 cup Fresh chopped cilantro or basil leaves
2 tbl Fresh lime juice
1 tbl Jalapeno, chopped and seeded (optional)
Instructions:
Instructions: 1. In a large bowl combine all the ingredients.

2. Taste and add more lime juice and salt, as needed.

3. Serve with grilled seafood (shrimp, salmon, tuna or swordfish) or pan seared chicken cutlets.
