Instructions: Peel the melon and cut into thin slices and then into pieces about 4 cm square.
Shred the ham. Bring the stock to the boil and add the shredded ginger and spring onion and the soy sauce. Simmer the soup until the melon is tender about 23 minutes. Serve the soup hot. Hint.
