Instructions: First preheat the grill then take 50g of a good melting cheese such as Fontina Gruyere or Taleggio slice it thinly lay the slices all over the omelette at the stage where it is almost set but still liquid (you could also add some ham now if you like) then flash the omelette pan under the preheated grill to melt the cheese quickly. Then turn is out as described earlier and this will produce a melted cheese centre that oozes out when you take your first forkful.
