Instructions: Place one tortilla on a hot griddle, and put grated cheese on top. Add the cooked turkey on top of that, and then add the mixed peppers and spring onion. Place another handful of cheese on top of that, and season with a litle salt and pepper. Seal the sandwhich with another tortilla lid. Cook for 2-3 minutes on each side.
For the salsa sauce to accompany, mix together the chopped tomatoes, onions and fresh coriander. Flavour with chilli powder, ground cumin and ground coriander, to create a dry salsa sauce. Cut the tortilla into quarters, serve with the dry sauce, and a spoonful of sour cream, sprinkled with fresh coriander. Email this Recipe:
