Ingredients:

2 tbl flat parsley chopped
2 tbl oregano chopped
2 tbl coriander chopped
4 clv garlic peeled and chopped
1 tsp cayenne pepper
1 tsp crushed (dried) chillies
4 tbl white wine vinegar
4 tbl olive oil
Instructions:
Instructions: Combine everything (apart from the sausages) and season to taste.

Allow to stand for at least an hour.

Cook the merguez on the barbecue for 15 to 20 minutes turning until done.

Serve hot with chimichurri.
