Instructions: This is a variation of the Petits Monts Blancs recipe on the previous page and all you need is the same amount of meringue and Mascarpone filling together with 6 passion fruit and a little icing sugar.

To assemble the 8 meringues spoon the seeds from half a passion fruit into the bottom of each meringue nest. Then mix the seeds from the other two passion fruit into the Mascarpone mixture. Spoon this mixture on top of the nests dust with icing sugar and serve.
