Instructions: In the summer soft fruit make the perfect filling as their sharp acidity contrasts beautifully with the sweetness of the meringue. For 8 meringue nests use the same quantity of Mascarpone cream as for the Petits Monts Blanca together with I lb (450 g) of strawberries raspberries or my favourite a mixture of redcurrants raspberries and strawberries. Then dust the fruit with icing sugar before serving. Nice made with a sauce of pur&d fresh raspberries sweetened with a little icing sugar.
