1/4 cup sherry vinegar
2 tbl minced shallots
Salt to taste
Freshly-ground black pepper to taste
1/2 cup canola oil
1/4 cup walnut oil
1 lb mesclun salad
1 cup toasted walnuts
Instructions:
Instructions: Whisk together vinegar, shallots, salt and pepper. In a slow stream add the oils. Set aside.

Toss together greens, walnuts and dressing. Serve with Stilton cheese.
