Instructions: Split mesquite log into smooth planks slightly longer and wider than the fish to be cooked. Clean fish, open along back and remove bones. Mount fish skin side down with wood nails or pegs. Apply butter/ margarine or peg bacon to fish. Lean plank near fire of hot mesquite coals turning occasionally to baste. Use green stick to prop plank. Fish is ready when it becomes white and flaky. Serve each fish with its own hot plate
