2 lb red potatoes cut into chunks
2 med chopped tomatoes
1 x green bell pepper seeded and chopped
1 x red bell pepper seeded and chopped
1 tsp cilantro dried
1 tsp jalapeno chopped
1/2 cup nonfat mayonnaise
1/2 cup plain nonfat yogurt or ff sourcream
3 tsp lime juice
Instructions:
Instructions: I tried this recipe the other day and the binder would be WONDERFUL spread over a plate of ff refried beans then topped with grated ff cheddar cheese for a mexican dip.. It was REALLY GOOD!

1. Bring a large pot of water to a boil. Add potatoes and cook for 15 minutes or until tender. Drain and chill for 30 minutes.

2. Toss potatoes with tomatoes and green bell pepper, and red bell pepper.

3. Combine cilantro, jalapeno, mayonnaise, yogurt, lime juice and cumin

4. Toss dressing with potato mixture.
