Instructions: Cook chicken breasts in skillet and dice. Mix soup and Rotel in bowl and warm in microwave for 1 minute. Add cheese, chicken, and onion. Warm in microwave again for 1 minute.
Get casserole dish and put some soup mixture on bottom. Add layer of chips then put some soup mixture on top. Sprinkle with grated cheese. Repeat the layering process until all the soup mixture is gone or the casserole dish is filled. Make sure the layers are not too dry. Put dish in the oven for 30 minutes at 350 degrees. Serve hot.Or put in microwave and heat for 4 minutes. note-it is great to reheat for up to 4 days. I use a glass baking dish so that I can put it in the oven or microwave.
