8 x	eggs, beaten
1 cup	cottage cheese
1 cup	heavy cream
	Salt, to taste
	Tabasco sauce, to taste
1 can	chopped green chilies, (4-ounce)

Instructions:

Instructions: Preheat oven to 350 F. In a large bowl, whisk together the eggs, cottage cheese, cream, salt, and Tabasco sauce. Stir in the chilies and cheese and mix together well.

Pour the mixture into a greased 10-inch quiche pan and bake for 35 to 40 minutes. Remove and let stand for 5 minutes. Serve.

YIELD: 6 SERVINGS
