Instructions: Slice onions and mushrooms.
Sice tomatoes and spring onions. Heat butter in a fry pan, add onion and cook 2 minutes without colour, add mushrooms and continue to cook gently 3 minutes longer. Add wine, tomato paste, lemon juice and bring to the boil. Butter a casserole dish, lay fish in base and season with papika. Pour over onion/mushroom mixture, sprinke with sliced pimento and cover with tomato slices. Season well. Cover and cook in oven at 180C/350F for 30 minutes or until fish flakes easily.
