Ingredients:
Amount Ingredient
6 x littleneck clams
6 x mussels
6 lrg scallops
4 lrg shrimp -- peeled and deveined
6 x pieces fish fillets -- 2 ounces each
*i.e. halibut, salmon, snapper, sole - etc.
1 whl Maine lobsters -- cleaned*
4 cup dry vermouth
1 cup Poblano peppers -- pureed
*roasted, cooled in bag, then peeled
1/2 cup cilantro -- pureed with
1/4 cup olive oil
2 tsp shallots -- chopped
2 tsp garlic -- chopped
2 tbl butter

*Clean the lobster by removing the stomach and intestines.

Add all of the above ingredients to a Dutch oven or large heavy-sided pan.

Bring to a boil over medium heat. Simmer 8-12 minutes, or until clams open.

Serve in wide-rimmed soup bowls, and garnish with a cilantro sprig.
