6 x Eggs
1/4 cup All purpose flour
1/2 tsp Baking powder
1/2 tsp Salt
1/4 lb Canned green chilies, diced, (wear rubber gloves)
1 cup Cottage cheese
1/2 lb Monterey Jack cheese, shredded
2 tsp Unsalted butter
1/2 lb Cooked ham, cut into 3/4 inch slices
Instructions:
Instructions: Prep: 10 min, Cook: 30 min. Preheat oven to 375 F. Whisk eggs in a mixing bowl. Add flour, baking powder and salt and mix thoroughly. Stir in next 3 ingredients. Transfer to a buttered 9 inch baking dish. Bake 30-35 minutes or until center is just set. Let stand 5 minutes before cutting into squares. Melt butter in a heavy nonstick skillet over medium heat. Saute ham 2-3 minutes per side until browned. Transfer to a platter and keep warm until ready to serve with eggs and salsa.

This recipe serves 8 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 8.
