Instructions: Fry onion in oil until it is softened but not browned. Add next 6 ingredients and bring to a boil. Cover the skillet and reduce heat to simmer. Simmer for 25 minutes or until rice is tender. Add smoked sausage, cover and simmer 5 minutes.
Sprinkle cheese over mixture in skillet, cover and cook until cheese melts, about 2 minutes. Serves 4. (If you prefer it hotter, dont drain chilies and add more chili powder.) Email this Recipe:
