Instructions: Filling: In a medium-sized skillet set over medium heat, brown the ground beef, chopping it with a spatula into fine bits. Drain the fat and add the salt, garlic, onion, tomato paste, water, ground cumin or chili, and jalapeno pepper. Cook, stirring, for about 5 minutes, then add the corn and drained beans, and cook until heated through. Mix in half of the bunch of cilantro, which youve minced.
Sauce:Mince the remaining cilantro finely, and combine it with the sour cream, lime oil or juice, and dried onion. Refrigerate for 30 minutes or longer, to meld flavors. Assembly: Spoon about 1/2 cup of the filling down the center of one of the breads. Top with 1 tablespoon of the sauce, then garnish with shredded lettuce and diced tomato. Serve immediately.
