1 lb lean ground beef
1 tsp salt
2 x cloves garlic peeled and chopped
1 cup chopped onion
1 sm can tomato paste
1/2 cup water
2 tsp ground cumin or chili powder (2 to 3)
1 x jalapeno pepper seeds removed,
minced (1 to 2 tablespoons)
3/4 cup fresh corn (about what comes off one 1 large ear corn)
1 can black or kidney beans drained
1/2 bn fresh cilantro
Sour Cream-Cilantro Sauce
1/2 bn fresh cilantro
1 cup sour cream
1/8 tsp lime oil OR 2 teaspoons lime juice
1 tbl dried minced onion
Topping
iceberg or romaine lettuce shredded
Instructions:
Instructions: Filling: In a medium-sized skillet set over medium heat, brown the ground beef, chopping it with a spatula into fine bits. Drain the fat and add the salt, garlic, onion, tomato paste, water, ground cumin or chili, and jalapeno pepper. Cook, stirring, for about 5 minutes, then add the corn and drained beans, and cook until heated through. Mix in half of the bunch of cilantro, which youve minced.

Sauce:Mince the remaining cilantro finely, and combine it with the sour cream, lime oil or juice, and dried onion. Refrigerate for 30 minutes or longer, to meld flavors.

Assembly: Spoon about 1/2 cup of the filling down the center of one of the breads. Top with 1 tablespoon of the sauce, then garnish with shredded lettuce and diced tomato. Serve immediately.
