Ingredients:

3 cup fat-free egg substitute or 24 egg whites
10 oz tofu soft
3 tbl low sodium soy sauce
1 tsp turmeric
1/4 tsp black pepper
1 x tomato diced
1/2 x onion diced
2 x garlic cloves peeled and minced
2 tbl green chiles diced
1/4 tsp ground cumin
Instructions:
Instructions: Beat egg substitute or egg whites until broken up and just beginning to foam.

Crumble the tofu and add to egg mixture. Add the soy sauce, turmeric, and pepper and set aside.

In a skillet at medium heat, add the tomato, onions, garlic, chili, and cumin until all the liquid has evaporated. Add the egg/tofu mixture to skillet. Scramble over medium heat until thoroughly cooked. Add chives or cilantro and serve.

Serving size: 1 cup
