Instructions: Beat egg substitute or egg whites until broken up and just beginning to foam.
Crumble the tofu and add to egg mixture. Add the soy sauce, turmeric, and pepper and set aside. In a skillet at medium heat, add the tomato, onions, garlic, chili, and cumin until all the liquid has evaporated. Add the egg/tofu mixture to skillet.
