1/2 lb vermicelli
1/4 cup lard
1 x half onion, finely minced
2 x tomatoes, peeled and chopped
2 cup chicken broth
Grated Monterey jack cheese
Instructions:
Instructions: Lightly brown vermicelli in lard. Remove from pan. and add onion and cook a few minutes. Add tomatoes and stir. Add chicken broth and bring to boil. Add vermicelli, cover, and simmer over low heat until vermicelli is done. Put on oven proof plate and cover with Monterey jack cheese. Put a pat of butter over all and broil until cheese browns and bubbles.
