Instructions: In a 4 quart pot over medium heat, brown and chop sausage very well.
Remove sausage from pot. Add the olive oil to the pot, then the onion, celery and green bell pepper. SLOWLY saute until onion just begins to brown. Add the tomato paste and sauce and one tomato sauce can full of water. Stir to mix ingredients and add sliced mushrooms and sausage. Stir to mix. Add spices and stir to mix. Taste and adjust salt it needed. Bring to a boil (uncovered) then turn down the heat and simmer for about four (4) hours. Stir every 30 minutes and add water as needed. Email this Recipe:
