1 lb fresh tomatoes
1 med onion, cut into thin wedges
2 tsp minced garlic
1/4 cup black olives, pitted
1 tbl olive oil
1/4 tsp Italian seasoning, divided
3/4 tsp salt
1/4 tsp ground black pepper
Instructions:
Instructions: In an 11-by-7-by-2 inch microwaveable dish, combine tomatoes, onion, garlic, olives, olive oil, 3/4 teaspoon of the Italian seasoning, salt and pepper until well blended. Cover loosely with waxed paper. Microwave on high 4 minutes. Stir; cover loosely and microwave 4 minutes longer.

Sprinkle fillets with remaining 1/2 teaspoon seasoning. Tuck under both ends of fillets; arrange on top of tomato mixture. Cover loosely with waxed paper.

Makes 4 servings.
