Instructions: Crumble ground beef in ungreased microwavable pie plate, 10x1 1/2-inches.
Add onion. Cover loosely and microwave on high (100%) for 3 minutes: stir. Cover and microwave until beef is done, 3 to 4 minutes longer. Drain. Stir in salt and pepper. Beat milk, eggs, and baking mix until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Microwave uncovered on medium high (70%), rotating plate 1/4 turn every 6 minutes, until knife inserted in center comes out clean, 12 to 18 minutes. Top with tomatoes and cheese. Microwave, rotating plate 1/4 turn every 3 minutes, until cheese is melted, 6 to 8 minutes. Let stand on flat, heat-proof surface 5 minutes (do not let stand on wire rack). 6 to 8 servings.
