Instructions: Wash zucchini and remove stem ends. Cut it in half lengthwise and remove the seeds with a spoon. Cut the zucchini (leaving skin on) into 1/4-inch dice. Halve or quarter cherry tomatoes, depending on their size.
Set squash in microwavable round pan with 1 teaspoon of water and season with salt and pepper. Cover and microwave for 3 minutes or until crisp but somewhat tender. Remove the cover, stir the vegetables, add butter and tomatoes. Microwave uncovered for 1 minute more. Stir and serve immediately. This recipe yields 2 servings. Email this Recipe:
