7 cup (2 1/2 pounds) cubed red-skinned potatoes
1 cup cold water
3/4 cup diced sharp cheddar cheese
3/4 cup diced Swiss cheese
1/2 cup sliced green onion
2 x hard-cooked eggs, peeled, chopped
3/4 cup salad dressing
1/4 cup milk
1/2 tsp salt
1/2 tsp black pepper
Instructions:
Instructions: Place the potatoes and water in a 3-quart microwave safe casserole.

Cover and microwave on high for 16 to 18 minutes, stirring after 9 minutes, or until the potatoes are tender. Remove and drain the potatoes.

Place the potatoes in a large bowl. Add the cheddar cheese, Swiss cheese, green onion and eggs.

Mix together the salad dressing and milk and pour over the potato mixture.

Gently stir to combine. Season with salt, pepper and Natures Seasons blend.
