Instructions: Heat butter and oil in a 10 inch diameter quiche or deep pie dish, uncovered, at full power for 2 minutes. Add onion, and stir to coat with the butter and oil. Cook, uncovered, at full power for 5 minutes.
Add rice and stir to coat. Cook, uncovered, for 5 minutes more. Stir in broth. Cook, uncovered, for 12 minutes. Stir well and cook for 12 minutes more. Remove from oven and let stand uncovered for 5 minutes to let rice absorb remaining liquid. Stir in salt, pepper and cheese. Note: Recipe is written for smaller microwaves of 500 watts or less. To cook In a more powerful oven, reduce time to 4 minutes in second and third steps; and 9 minutes in last two steps. Email this Recipe:
