1/2 lb red-skinned potatoes cut into 1" chunks
1 cup fat-free low-sodium chicken broth
Instructions:
Instructions: In a large microwave-safe bowl, combine potatoes and broth. Cover and microwave on HIGH for 14 to 18 minutes, or until soft.

With a fork or potato masher, mash potatoes until chunky. Stir in salt.
