1/4 cup sugar
2 x eggs, separated
3 tbl quick cooking tapioca
1/4 tsp salt
2 cup milk
2 tbl sugar
Instructions:
Instructions: Mix together sugar; egg yolks, tapioca, salt and 1/2 cup milk in a 4 cup measure. Microwave on high (100%) for 4 to 6 minutes or until boiling.

Stir mixture occasionally during halftime of cooking.

Beat egg whites until foamy. Gradually beat in 2 tablespoons sugar and vanilla until soft-peaks form. Fold in hot tapioca mixture. Serve warm or cold.

Recipe yields 4 to 6 servings.
