1/2 cup couscous or bulgar wheat
3 cup boiling water
1/4 cup chopped apricots
2 tbl currants
1/4 cup pine nuts or walnuts
1/2 tsp garlic powder
OR 1 teaspoon crushed garlic
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp pepper
Instructions:
Instructions: Quick cooking brown rice, bulgar wheat and couscous which can be cooked by simply soaking in hot water are perfect for the road. Check package directions and adjust standing time if necessary.

In a wide mouthed thermos, combine couscous or bulgur, water, apricots, currants, nuts, garlic, cinnamon, salt and pepper and stir. Secure the lid tightly and let stand for 15 minutes, or until grain is tender. Stir in parsley, and adjust seasoning to taste, if necessary.

Makes 4 servings. Vegan
