Instructions: In a medium mixing bowl stir together yogurt, cilantro or parsley, and curry powder. Stir in cashews, cucumber, sweet pepper, and red onion. Spoon evenly into split pita rounds.
Comments: To tote this sandwich for lunch, pack the cashew salad in airtight container. Place container in an insulated lunch box with a frozen ice pack. (cashew salad will hold for up to 6 hours.) Spoon the salad into the pita just before eating. NOTES : Crunchy cashews, cucumber, sweet pepper and a curry-yogurt sauce make up this winning sandwich. Email this Recipe:
