1 sm ripe melon
1 cup strawberries thinly sliced
1 x 3inch piece cucumber thinly sliced
1 sm crisp lettuce shredded
4 tbl french dressing (qv below)
7 tbl chopped fresh mint or lemon balm
7 tbl slivered almonds to garnish
----------------- French dressing: ----------------
1 cup olive oil
5 tbl white wine vinegar 1/2 teaspoon french mustard
1 clv garlic minced
1 tsp clear honey
small strip of lemon rind
few sprigs of fresh herbs
Instructions:
Instructions: First make the dressing.

Beat together the oil vinegar mustard garlic honey; lemon rind herbs and salt and pepper to taste until well blended.

Alternatively place all the ingredients in a screwtop jar and shake vigorously to combine well before using.

Cut the melon into quarters then remove the seeds and rind.

Cut the flesh into cubes about 1/4 inch square or scoop into balls.

To serve place the shredded lettuce on a large serving dish or 4 individual plates.

Arrange the pieces of melon strawberry and cucumber on top of the lettuce.

Mix the French dressing with the chopped mint or lemon balm and pour it over the salad just before serving. Sprinkle with the almonds to garnish.

This refreshing salad is delicious with a selection of cheeses or ham.
