Ingredients:
Amount Ingredient
2 cup original all-bran with enough hot water to cover
1 cup (2 sticks) butter or margarine,
or
1 cup vegetable oil (your choice)
1/2 cup white sugar
1/4 cup brown sugar
4 x eggs
1 x (16-oz.) jar of applesauce
4 cup whole-wheat flour
2 tsp baking soda
1 tsp salt
3/4 tsp allspice
3/4 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp ground cloves
1 med orange, finely chopped (including peel)
1 x The peel of 2 other oranges, finely chopped
1 x (18-oz.) box old-fashioned oats
Instructions:
Instructions: In a large measuring cup, cover the all-bran with hot tap water. In a large bowl, cream butter, margarine or oil with sugar and eggs. Add applesauce. Stir in flour, soda, salt, allspice, nutmeg, cinnamon and ground cloves. Add orange and peel. Then add oats and flax seeds. Add bran, which should have soaked up all the water. Pour batter into muffin tins, which have been sprayed with nonstick vegetable cooking spray. (I use the foil pans sprayed with Pam so the muffins can be easily removed.)

Bake in a preheated 350-degree oven for 45 minutes. Remove from oven and cool on wire racks after removing from pans. Freeze in reclosable plastic bags. Wrap each muffin in a paper towel and heat in microwave oven for about 1 minute to serve.

Note: Whenever I peel an orange, I always save the peeling and put in plastic bags in the freezer to use in these muffins. The flax seeds take the place of nuts. You can also add chopped apple.

Makes 30 muffins. These need to be refrigerated because with all the fruit, they will spoil quickly.
