Instructions: Smash garlic cloves and steep in olive oil while preparing other ingredients.
Wash and tear romaine lettuce. Wrap in dish towels and refrigerate. Cook bacon and toast croutons in bacon drippings. Drain both well and set aside. Mix dry ingredients for dressing together (s&p, mustard); juice lemon, add Worcestershire and Tabasco. In large wooden salad bowl, mash garlic with anchovy paste. Add dry ingredients, then lemon juice mix. Add 1/2 c chicken broth and egg, if desired. Mix well. Slowly drizzle in olive oil until dressing thickens. (For thicker creamier dressing, increase oil and decrease broth; total liquid is 3/4 c.) Toss with lettuce, then add bacon, croutons and cheese. Mix very thoroughly (be sure to get dressing all over) and serve on a large plate. ( Mike McCarthy note: The real fighter pilots prefer Caesar Salad to be served with fresh French garlic toast and abundant wine. The salad must be mixed and served/eaten immediately, otherwise it gets soggy. The rest of the meal can follow, but it is usually an anti-climax.)
