Instructions: Cook carrot & onion in microwave on high for 3 or 4 min. to soften.

Combine all ingredients in large bowl and mix well. Add only enough bread crumbs so that the loaf holds together well. Form into a loaf & place into an Au gratin or shallow baking pan, large enough to hold it. Preheat the oven to 350 deg. and cook loaf for 1 1/2 hrs. or until internal temp.

reaches 170 deg. Serve with salsa ketchup or your favorite sauce.
